Cajun Surimi Summer Pasta

Ingredients:

  • 8oz Surimi, flaked
  • 2 Cups Cooked Penne
  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Cajun Spice
  • 1 Cup Frozen Corn Kernels, thawed
  • ½ Tablespoon Chopped Garlic
  • 1½ Tablespoon Lemon Juice
  • 1 Teaspoon Lemon Zest
  • 1/2 cup Whole Milk
  • ½ Red Bell Pepper, Sliced
  • ½ Red Onion, Sliced
  • 1/2 Cup Sliced Zucchini
  • 1/2 Cup Water
  • 1T Chopped Basil
  • Season with Calt and Pepper

Instructions:

  1. Place a large skillet or Wok on medium-high heat and add the olive oil. 
  2. Add the garlic, onions, Cajun spice and bell peppers, cook until the onions are soft, about 4-5 minutes.
  3. Next add the zucchini and corn and cook another 2 minutes.  Finally, add the milk, lemon juice, zest, and water to the pan and simmer for 5 minutes. 
  4. Season with salt and pepper.
  5. Add the pasta, ensuring it is well coated with the sauce.
  6. Fold in the surimi and top with basil before serving.
