Surimi Lettuce Wraps

Ingredients

  • 8oz Surimi, Flaked and Lightly Chopped
  • 14 each large green lettuce leaves, washed thoroughly
  • 1 Medium Red Bell Pepper, Sliced
  • 1 Carrot, Shredded
  • 3 Tablespoon Green Onion, Chopped
  • 1 Medium Cucumber, cut in half lengthwise and sliced
  • Cilantro Leaves
  • Mint Leaves
  • 1½ Tablespoon Hoisin Sauce
  • 2 Tablespoon Soy Dressing (Recipe Below)
  • 2 Tablespoon Sriracha Mayo (Recipe Below)

Soy Dressing

  • 1/2 Cup Soy Sauce
  • 1/4 Cup Rice Wine Vinegar
  • 1/4 Cup Water
  • 1/2 Teaspoon Sesame Oil
  • 1/4 Teaspoon Sriracha

Sriracha Mayo

  • 1/4 Cup Mayo
  • 1 Tablespoon Sriracha
  • 1 Teaspoon Lime Juice

Instructions for Dressing: Combine all ingredients and whisk until incorporated.

Instructions for Lettuce Wraps

  1. In a small mixing bowl, add surimi, hoisin sauce, and 2 Tablespoon of soy dressing. 
  2. Mix until surimi is just coated. 
  3. Arrange the Surimi, lettuce, vegetables, mint, and basil leaves on a serving platter. 
  4. Reserve the remaining soy dressing and sriracha mayo for topping the lettuce wraps.
