Mac N Cheese Fritters





  • 8oz Surimi, flaked and lightly chopped
  • 2 Cups Cooked Macaroni, Al Dente (or 8oz Uncooked Macaroni, Boil in salted water until Al Dente, around 5-7 minutes)
  • 3 Tablespoon Diced Yellow Onion
  • 2 Tablespoon Salted Butter
  • 2 Tablespoon A&P Flour
  • 1/2 Cup Whole Milk
  • 1 Cup Shredded White Cheddar
  • Salt and Pepper


  1. Preheat oven to 400F. 
  2. In a medium saucepan, melt the butter. 
  3. Add the onions and cook until soft, about 4-5 minutes. 
  4. Next, add the flour and mix well until paste forms. 
  5. Add the milk and stir until the mixture incorporates and forms a thick sauce, season with salt and pepper. 
  6. Remove the mixture from the heat and add the shredded cheese, then fold in the cooked pasta, mixing until all of the pasta is coated. 
  7. Fold in the surimi last.
  8. Using butter or pan spray, liberally grease a nonstick mini muffin tin. 
  9. Carefully scoop about 2T of the mixture into each of the muffin tins. 
  10. Bake the fritters for 15 minutes or until golden brown. 
  11. Let them cool for 10 minutes. 
  12. Once cooled, carefully run a toothpick around each cup and remove it from the tin.
